I decided to categorize the hot sauces in the fridge this morning - I normally grab them based on flavour - don't think much about heat level, but this got me thinking.

I'd say my comfort level is around the habanero pepper sauces - but jumping into the ghost pepper sauces can be fun.

This is what's in the fridge :D: (SHU = Scoville Heat Unit)

Louisiana - 1000-2000 SHU
Cholula - 1000-2000 SHU
Sriracha - 1,000-2,000 SHU
Huy Fong's Chili Garlic Sauce - 1,000-2,000 SHU
Sriracha Panich - 1000-2,500 SHU
Franks Extra - 2,000 SHU
Valentina Extra Hot - 2100 SHU
Tabasco - 2500 SHU
Tapatio - 3000 SHU
Yucatan Sunshine Habanero - 7,600-9,500 SHU
El Yucateco Green - 9,000 SHU
El Yucateco XXXTra - 10.000-12,500 SHU
Yellow Bird Habanero - 15,580-54,530 SHU
Encona Exxxtra Hot - 100.000-400,000 SHU
Dave’s Gourmet Ghost Pepper - 650,000 SHU

I don't think I've had anything over 1M SHU thus far - but could be wrong....lots of suicide wings in my distant youth. :D (scarfed down with pitchers of watery draft beer).

There used to be a place in silicon valley on the upper peninsula where they served habanero burgers. I think it was torn down and replaced with a race track or something.

Anyway, when I worked at Exponential, they regularly took all the newbies up there and, almost like hazing, you ate a burger. You had to sign a release, etc., and if you ate it without drinking milk you got your name on the Habanero Hall of Fame in the restaurant. Other than the crazy adrenaline rush which had me shaking uncontrollably, I had no problem eating it, but man did it hurt coming out later.

Anyway, at this point my taste buds are fried, so I’m always dousing stuff in hot sauce. But I stick to stuff in the 10k-25k range. More than that is just masochism.
 
I don't mind heat. Actually prefer it in BBQ and wing sauce. But too much heat for the sake of heat doesn't work for me. I can eat the Atomic wings at BW3, but I need to use a fork because while the inside of my mouth can take it, my lips don't like it much. I can also eat straight horseradish.

Wow! They have a bunch of interesting sauces. I wonder if we have a reseller that has them here. :). Peach Habanero! :)

So, yep, that's some serious heat. :)

One of my favorite mild sauce is a peach and Vidalia onion that you can get at Rouses. I grow my own peppers so I can spice to taste, and was able to feed my brother fresh habaneros, which he eats like candy, when he came to visit.

Went to a party in NOLA one time where the host had made a perfectly spiced gumbo. It didn't need anything. His brother-in-law decided it wasn't quite there and reached for the red bottle on the table. It wasn't until after he put quite a bit in, with the rest of us shouting warnings, that he realized it was Dave's Insanity Sauce. I thought his head was going to explode on the first spoonful.
 
I do have a funny hot sauce story.

One time coming back to WV from Indiana we stopped at this store in Cincinnati called Jungle Jims. Huge grocery store with lots of international and special foods. They also have a large section of BBQ sauce, hot sauce and meat rubs.

So I grabbed a sauce called “Man Sauce”. Figured I would find something to put it on. As we get into WV the wife asks if we can stop at Jim’s Spaghetti House in Huntington. Place is a local treasure and has been around as long as I remember.

It’s an old school place where the servers all still wear the white uniforms from yesteryear. So we get seated and it just so happens behind us is the server station. I’m not paying attention if anyone is back there and I say to my wife “I need to find something to put my Man Sauce” on.

I couldn’t see it, but the way my wife described the look on the server who was standing right behind me, well let’s just say she was thinking of something other than hot sauce. 😂
 
I love hot sauces and spicy foods. But I met my match when I ordered a dish of kua kling from the Thai izakaya down the block from my house. I told the chef (and sole employee) that I wanted it as hot as she made it at home.

It's a miracle that I can still speak.

El Yucateco Green is the favorite in my home. Decent heat and flavor. My heat tolerance is decent but it depends on my location. My genetics demand that spicy food causes sweat on my bald head. It’s exactly the zone where a yamaka (spellcheck does not like how I spell this) would go. I find it embarrassing in public so I need to wear a winter hat or ball cap OR have a mild hot sauce. Save the real shit for home.

I get that. I think I need to learn how to wrap a proper turban so I can go to Swagat and eat proper Indian food spiced properly without the wetness stinging my eyes.
