What are you doing today?

5-lb prime rib last night, came out amazing! Really neat cooking method: meat to room temp (so 2-3 hours out of the fridge), 500° F pre-heat, then cook for 5 minutes per lb (exactly, rib-in factored in, we were 4.7 * 5 = ~24 minutes), then shut off the oven and let it coast about 2 hours for a near perfect med-rare (DO NOT OPEN THE OVEN), we also used a remote thermometer set to 130° (we hit 131 at about 1:45 during the rest).

Looks yummy. :)

We use Alton Brown's reverse sear where we cook at 250 degrees (we out ours on a BGE) until internal temp hits 125-127. Then pull it and foil it for a couple of hours letting all the juice drain and collect. The crank up the temp on the BGE to 600 degrees and sear each side for a couple of minutes, then bring it in and serve. Nice crust on the outside, but pink all the way to the edge.

What kind of rub or seasoning do you use? We rub ours in a mix of horseradish mustard, rosemary, thyme and olive oil.
 
Ordered my 14 DVD set of Hee Haw, not all the episodes but as close as I can get. I'll then rip them into my Plex, I did the same with Benny Hill DVDs and it makes for a fun project.

Working... Like a chump. Don't know why they didn't give us this day off. School is not in session, and no upper management is in the office. My theory is they want us to burn a vacation day, which I, A B S O L U T E L Y, refuse to do. If they think I won't just sit here and stare for 7 hours, they have another thing coming...

at least you have vacation days. We have “take vacation whenever you want” with the caveat that if you actually take off then all the work still needs to get done and your colleagues and management will take notice that you dared to exercise the privilege. The end result being nobody takes off more than a week in a year, but unspent vacation doesn’t get returned to you as pay when you quit.

Yikes, that sucks. Although I do admit I break the tradition here: if you decide to take more than one consecutive week off, you get an eyebrow raised. You cannot go to Europe and enjoy yourself on a 1-week vacation. My wife just told me, when she retires, we are going to England/Wales for a Month! I cannot wait to put in that vacation request... 😱

Our PTO got converted to DTO and of course that's the end result of such a switch. :|
