Homekit as of early 2022 is still a hit or miss. It now unifies your smart devices pretty well, but it's still dumb as a rock. For example there's no way to randomize or fade the color of lights, or turn of sensors without a workaround. After many months, I found a do not disturb:
1. You buy a physical switch
2. You turn your sensor automations to shortcuts
3. You make sensor behavior conditional to the switch's state.
4. You make sure that the switch's state reverts to default after a few hours.
